Almond Mashed Sweet Potatoes

  • 2 pounds sweet potatoes
  • 4 tablespoons butter
  • 1 teaspoon cinnamon
  • 4 ounces almond milk (unsweetened vanilla)
  • 2 ounces bulk sliced almonds

  1. Peel and cut sweet potato into chunks and place in pot. Cover with water, bring to a boil and boil until soft, about 30 minutes.
  2. Drain, return to pot, and mash until only small chunks remain. Add butter, almond milk and cinnamon and continue to mash to desired consistency.
  3. Transfer to a large bowl and sprinkle the top with sliced almonds.
