Baked Apple Pie Nutty Apples

    A quick and unique way to make apple pie – and it is gluten free too!


  • 6 large, apples, cored
  • 1 tbsp(s) ghee or butter
  • 2 apples of any kind, cored, peeled, and diced
  • 1 tbsp(s) maple syrup
  • 1 tsp(s) cinnamon plus extra for finishing apples
  • 6 pitted dates, chopped
  • 1/4 tsp(s) salt
  • 1/4 cup(s) walnut pieces
  • 2 tsp(s) arrowroot powder
  • 4 sheets capello’s gluten free lasagna, cut in half crosswise, then into ½"-1 inch strips lengthwise

  1. Preheat oven to 350º F.
  2. Place 6 cored apples in a glass baking dish and set aside.
  3. Dice the remaining two apples.
  4. In a sauté pan over medium heat, melt the ghee or butter. Add diced apples and sauté for 5-7 minutes.
  5. Stir in maple syrup, cinnamon, dates, salt, and nuts. Remove from heat.
  6. Add the arrowroot powder and mix well.
  7. Spoon the diced apple mixture into each one of your apple “bowls.”
  8. To make the crust: cut the lasagna sheets into strips.
  9. Wet the ends of the strips and place over the apples in an “X” pattern, pressing the strips to the bottom of the apples. Sprinkle crust with a little cinnamon.
  10. Add a small amount of water to the baking dish to just cover the bottom.
  11. Loosely cover with foil and bake for 30-35 minutes or until apples are soft.
  12. Remove foil for the last 10 minutes of baking so the crust can brown.
