Spaghetti Squash Au Gratin

    A delectable way to make the most of your spaghetti squash.


  • 1 medium spaghetti squash
  • 1 tbsp(s) extra virgin olive oil
  • to-taste sea salt and pepper
  • 2 tbsp(s) butter
  • 1 small yellow onion, cut in half and thinly sliced
  • 1/2 tsp(s) dried thyme
  • 1/2 cup(s) heavy cream
  • 1 cup(s) shredded swiss cheese

  1. Heat the oven to 350°.
  2. Cut the squash in half lengthwise and scrape out the seeds.
  3. Brush the flesh with the oil and season generously with salt and pepper.
  4. Place the squash halves cut side up on a baking sheet and roast until fork tender, about 50 minutes.
  5. Set aside and let cool to the touch.
  6. Once the roasted squash has cooled, use a fork to scrape the insides of the squash; transfer the strands to a large bowl.
  7. Melt the butter in a medium skillet over medium heat.
  8. Add the onions and thyme and cook until the onions are soft, about 8 minutes.
  9. Add the onions, cream, and half of the cheese to the bowl of squash and mix well.
  10. Transfer the mixture to a buttered baking dish and top with remaining cheese.
  11. Place into a 350º for 15 – 20 minutes until golden brown on top.
  12. Let stand for 10 minutes and serve.
